Super Yummy Cornbread

Here at the Live and Love…Out Loud household, my cornbread is always a hit. It’s the ultimate comfort food – super yummy and super moist. If your family is anything like mine, they’ll keep coming back for more! Enjoy…

Ingredients:

  • 1 stick of butter, softened (I personally use Imperial margarine. It’s not the healthiest option, but I’ve found that margarine makes the cornbread super moist.)
  • 2 eggs
  • 1 cup milk
  • 3/4 cup sugar
  • 2 cups Bisquick
  • 1/3 cup yellow cornmeal (*Use more if you prefer your cornbread on the gritty side.)

Preparation:

Preheat oven to 325 degrees. Grease a 9 x 13-inch baking pan or spray with nonstick cooking spray.

In a medium bowl, whisk together the softened butter, eggs, milk and sugar. Gradually add the Bisquick and cornmeal to the wet mixture and stir until blended. Spread cornbread mixture in prepared baking pan.

Bake for 20-30 minutes, or until inserted toothpick comes out clean. Yields 16 pieces.

No, I haven’t added corn to it but it’s definitely crossed my mind. In fact, I may need to give it a try later on this week when I make taco soup. I think that would be a great compliment to the cornbread. Thanks for the reminder. I hope you enjoy the recipe. :)
